                                                   Baked Pineapple

 

Ingredients:

1/4 cup warm water

2 Tbsp. cornstarch

1 – 20 oz. can unsweetened crushed pineapple (do not drain)

1/4 c. sugar 

2 eggs, beaten

1 tsp. vanilla

 1/4 tsp. cinnamon to taste

 

Preheat oven to 350 degrees

 

Dissolve cornstarch in warm water.  Mix in the rest of the ingredients.  Pour into a greased uncovered 1 qt. casserole dish.  Sprinkle top with more cinnamon and bake for one hour.

 

  This is a great side dish with a baked ham, and also cold on ham sandwiches.
