Blackberry Salad with Creamy Feta Cheese

Ingredients:

1 recipe Quick Pickled Onions (recipe below)

4 oz. feta cheese

2 tbs. Olive oil

6-8 cups fresh blackberries (you can also use a mixture with blueberries)

1/3 cup fresh mint (large leaves torn)

2 tbs. sugar

2 tsp. finely shredded lemon peel

1 tbs. olive oil

Dash crushed red pepper (optional)

 

Directions:

 Recipe for quick pickled onions as follows

Ingredients:

1 thinly sliced or ½ large red onion

3 tbs. red cider vinegar

1 tsp. sugar

½ tsp. mustard seeds

¼ tsp. salt

In a bowl, toss red onions, vinegar, 1 tsp. sugar, mustard seeds and salt. Cover; let stand at room temperature for 1 to 4 hours, stirring occasionally.

 For creamy feta cheese, in a food processor combine the feta cheese, 2 tbs. olive oil and red pepper. Cover and process until smooth.

 In a large bowl toss blackberries or mixture of berries, mint, sugar, lemon peel, and drained pickled onions. Arrange on a platter, serve with creamy feta dressing and drizzle with olive oil.
