                               Cornbread

 

Ingredients:

3 cups cornmeal

2 beaten eggs

2 tbs. oil

2 tbs. flour

1 bell pepper chopped fine

1 onion chopped fine

2 stalks celery chopped fine

2 tbs. sage

1 qt. buttermilk

3-4 cups of Chicken broth

 

Preheat oven to 350 degrees

 

In a large bowl add first 8 ingredients, add about 2/3 of the buttermilk and mix well.

 

Pour in a greased baking dish and bake for about 1 hour. Remove from oven and cool.

 

Bring oven temperature down to 250 degrees

 

In a large bowl, crumble the cornbread, add chicken broth and mix well. Pour back into a greased baking dish and bake for 1 more hour. Remove from oven and cut into squares and enjoy.
