Grilled Pizza with Italian Sausage

2 - 12in. ready-made pizza crusts

No-stick cooking spray

Marinade ingredients:

1/3 cup light olive oil

3tbs. balsamic vinegar

2tbs. minced garlic

1tbs. chopped rosemary * optional

 

Grilled Toppings:

½ lb. spicy Italian sausage

1 red bell pepper, cored and sliced in half lengthwise

½ large red onion, peeled, cut into ½ inch wedges

 

Additional Toppings:

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 cup goat cheese, crumbled

2 plum tomatoes, halved, seeded and chopped

½ cup chopped green onions

Preheat oven to 375 degrees F

Whisk together all marinade ingredients and set aside

Spray grill with no-stick spray and preheat grill.

Brush sausage, red peppers and onions with marinade, sprinkle with salt and pepper to taste.

Grill until sausages are cook through and peppers and onions are slightly charred and crisp-tender, turning and basting occasionally with marinade, about 12 minutes for sausage and 8 minutes for vegetables. Transfer sausage to cutting board and cut into ½ inch pieces and peppers into thin strips.

Sprinkle each pizza crust with ½ of mozzarella and Parmesan cheese. Top each with ½ of sausage, peppers and onion, then ½ the goat cheese, tomatoes and green onions. Drizzle each with remaining marinade

Place pizzas on cookie sheet and bake 8-10 minutes in preheated oven until cheeses are melted and crust are golden brown.
