Meatloaf Stuffed with Cheeses and Spinach

 

Ingredients:

1 ¼ lbs. of lean ground beef

¾ lb. Italian sausage (remove from casings)

1 egg

1 (8 oz.) can pizza sauce or your favorite sauce

¼ cup Italian seasoned bread crumbs

¼ pepper

2 cups shredded 6 cheese Italian cheese blend (8 oz.)

2 cups loosely packed fresh baby spinach

 

Directions:

Pre-heat oven to 350 degrees F.

In a large bowl, mix ground beef, sausage meat, egg, ½ cup of pizza sauce, bread crumbs and pepper.

On a piece of foil, pat mixture to a 12x8-inch rectangle. Sprinkle evenly with cheese, gently press into meat and top with spinach. Starting at shortest end lift up foil and roll up meat tightly, tucking in any spinach leaves. Seal ends and place seam side down in an ungreased 12x8 (2 qt.) glass baking dish.

Bake for 1 hour, spread remaining pizza sauce on top and bake another 15 minutes or until thermometer inserted in meat reads 160 degrees F.

Let stand 5 to 10 minutes before serving.
